One of my new favorite ways to eat oatmeal?!??

Call them ProOats! Protein meets oatmeal!

Instead of sweetening my oatmeal with stevia, sugar, or honey, I’ve been stirring in anywhere between 1/2 a scoop to a whole scoop of flavored protein powder into my oats then topping off with my favorite fruits! This works well whether you make your oats on the stove, in the microwave, or overnight in the refrigerator!

Banana Split Oatmeal Recipe


Who said breakfast had to be boring to be healthy?!?!

Turn your oatmeal superfood into an even more delicious treat with my newest creation! If you’re like me, you’ll be so excited to wake up in the morning so you could eat!!!!

I made the delicious creation above by prepping some overnight oats.

1/2 cup old fashioned oats or 1/4 cup steal cut oats. Covered it with almond milk and sprinkled some cinnamon. In the morning, I dumped my ready overnight oats into a bowl, topped with 1/2 a banana (split lengthwise), a few sliced strawberries, drizzled it with sugar free chocolate syrup (times 2!), and a few walnuts. Oh what a delightful way to start a morning!

Breakfast Before Bed

Do yourself a favor and prepare tomorrow’s healthy BREAKFAST BEFORE you go to BED!

Not to sound like a broken record, but I love oatmeal for breakfast! As you already know from my prior posts,  I don’t only love it because it’s delicious, but also because it’s nutritional value makes it a super food. Warm yummy oatmeal is a perfect start to many mornings, and refrigerated overnight oats is the perfect start to the other mornings…..The mornings of summer where it’s hot out and your oatmeal can be yummy and somehow refreshing.

Overnight refrigerated oats are extremely easy to prepare. The idea is that the oats soak up the liquid and in essence “cook”, become thick and expand. All you need is a tupperware with a lid or a jar to put your concoction in, old fashioned rolled oats, a liquid (milk or water), and some creatively delicious toppings.IMG_3602

Here’s what I usually start with:

1/2 cup old fashioned rolled oats

dash of cinnamon

unsweetened vanilla almond milk (just enough to cover the oats in the jar)


Then I add in toppings that I would want to take part in the overnight fun of soaking! Toppings that usually make the cut in MY concoctions: (not all at once! I pick and choose based on what I’m in the mood for)

chia seeds

fruits: banana, figs, strawberries, blueberries, rasberries

mixins: peanut butter, almond butter, fruit jam, pumpkin puree

greek yogurt (makes it extra rich and creamy)

By the way, these don’t have to be in the container overnight, that’s just my personal preference…. Add them whenever you’d like!

Other add ons that I top my oats off with in the morning before indulging:

nuts: walnuts, almonds, pecans

chopped apple




dark chocolate chips


This morning I had a delicious serving of overnight oats with figs that soaked in my oats overnight. Time for me to hit the kitchen and see what fun I create for tomorrow’s healthy breakfast!
