Carrot Cake Smoothie

1 cup of shredded carrots
1 cup of milk (I’ve tried unsweetened almond and 1% milk)
Less milk if you want to use Greek yogurt for a creamier smoothie
1 tsp vanilla extra
Dash of cinnamon
2 packets of stevia or sugar
Optional: 1/2 tsp xanthan gum for a thicker smoothie
Optional: 1 tablespoon of flaxseed for added fiber

Some shredded coconut makes this even more delicious!

Blend all ingredients and enjoy!
